My mom and I have been making these cookies for as long as I can remember and anyone who’s ever had one (and likes peanut butter and chocolate) loves them. So, I thought I’d share our secret recipe with you! I’ve made mine for Valentine’s Day, but with a simple sprinkle change, they can be for any occasion, or no occasion at all. They are quick and easy to make so you’ll find yourself whipping up a batch here and there, you know, cause you just need some chocolate!
The Secret Ingredients…
- Ritz Crackers
- Peanut Butter
- Chocolate Candy (or chips, whatever)
Make peanut butter cracker sandwiches and melt the chocolate candy for dipping. You can do the whole double boiler deal, or buy the candy coating at your local grocer and use the microwave. Just be careful to do it about 20 seconds at a time because it’s nasty when it gets burnt. It’s best to use a plastic bowl that won’t get hot to the touch.
Use a fork to dip and let excess chocolate drip off into bowl. Place on wax paper, add sprinkles and let cool. Needs to cool at least 10 minutes before eating.
Now sit back and eat up! They are delicious and store easily for gift giving. I usually make a HUGE batch for Christmas and give them out as gifts. They are a huge hit and holiday favorite. Try the vanilla candy coating on a few cookies to add some extra color to the gift box of cookies. But whatever you do, remember, Shhh…it’s our little secret, don’t tell anyone how to make them!!
